1 Tablespoon of peanut butter (100 Calories)
Total calories for lunch: 352 calories!
As crazy as it sounds, this has probably been my favorite meal of the day for a while. I look forward to it. It's a treat. Probably because I enjoy peanut butter, I love cheese, and the Pink Lady apple is SOOO tasty!
As far as my choice of peanut butter, I prefer the Valencia Peanut Butter with roasted flaxseed. The only down side is that the only place I've been able to find it is at Trader Joe's and we don't have a Trader Joe's anywhere near where we live. (I guess I'll be stocking up next time I'm near one.)
Now that school is out for the summer, who knows what my next phase will be and what I will get hooked on eating for lunch. The wheels are starting to spin but this one will not be far out of my reach.
Yum! Your lunch looks so good! There is just something about peanut butter and apples! I love seeing what healthy foods people are eating, it always gives me good ideas!
ReplyDeletePink lady apples used to be my absolute fav until I came across an apple that is only out in the fall called a honeycrisp apple. It is red and granny smith green and it's the best apple EVER!!! It is so crisp, juicy and the perfect mix between tart and sweet. Keep your eye out for them. You won't be disappointed, trust me. :)
ReplyDeleteGreat idea! I also tend to eat the same breakfast and lunch for days on end. Much easier to plan for and pack! I am a school teacher in Utah, starting this week...this will be my lunch too. If it worked for you, I know it will work for me!
