Food Friday - Super Easy Breakfast Omelet!

So I think I'm addicted to feta. Yep, it's true. I love the fact that it's low in calories, you don't need much to add a great flavor to your food, and it can be used in so many ways. Thus, all the reasons you've seen feta popping up lately on "Food Friday."

Todays Pick:

Spinach and Feta Omelet:
Being on spring break this week allows me to play around with my breakfasts a little bit and not feel so rushed to take the usual when I head out the door in the morning. Best part about this one is that it literally calls for 3 ingredients! (Love it!)

You'll need:
Reddi Eggs or Egg Beaters (3/4 cup)
Fresh spinach (3/4 cup)
1/4 cup feta cheese
Get your pan nice and hot. Add in Reddi Eggs or Egg Beaters. (they should start to bubble right away.) place your spinach on one side of the egg mixture. Top entire egg mixture with feta cheese.



 Fold over egg on top of spinach to form omelet. Cook for a 2-3 minutes and then flip and cook the other side for a 2-3 
minutes.

It's simply that easy. And the best part is...It's very filling and a total of only 180 calories! And shall I mention, One of the tastiest breakfasts you can create.

    But it smells like feet.
    It should be called FEETA.

    I have a feta/cranberry/walnut salad about once a week at work and when i throw the bowl away in my trash I have to tie the trashbag because it smells like feet!

  2. I LOVE FETA! I ate a greek salad for dinner a few times this week and it never gets old. Crumbling 1 Tbsp in my salad seems like such an indulgence :)

  3. I've never tried feta before, I think it's going on today's grocery list. (For that matter, I've never made an omelette....my husband is a chef so I've only recently started cooking a little bit on my own.) This looks very good, I'll have to give it a try.

    2. I had some at a post 5K picnic on Saturday, I really liked it! I added an 1/8 of a cup to my salad tonight too, very nice addition to a salad. I am going to attempt the omelette Monday AM!

  6. Feta is weird to me! Some days I quite enjoy it, and other days it literally grows in my mouth. Or it feels like it does anyway :p I love how this looks though!

  8. Does reduced fat Feta work just as well? Is there really any difference as far as nutrition value when only using 1/4 C? I guess what I'm asking is, is the reduction in fat/calories worth the sacrifice in taste when only using that small of an amount?

    1. Jennifer, I never go reduced fat on anything. Never have. I like real mayo, real butter, real cheese etc. It really isn't worth the sacrifice in the end. Half of the time the "real" items are really the ones that are better for you. Hope that helped. :)

    2. I made this omlette this morning for breakfast and it was DELICIOUS! And I used the regular feta. I couldn't justify spending $3 more on reduced fat cheese to only save a few calories :)

  9. Thanks for the pictures and easy, clear directions! I made this omelet yesterday for myself and hubby, we both loved it! I was wondering about the premade egg mix, is this healthier than regular eggs? Or just more convenient? Please keep those tips and recipes coming!
